Pumpkin season is upon us and what better idea than to mix things up a little bit?
We love pumpkin everything: pie, latte, cake and even candles! But after a few weeks of the same we like to mix it up, so we brought butternut into the mix.
It is part of the same family but it has a different taste which we like since it’s not that sweet or dessert-y. It has more of a salty (or not sweet like pumpkin) flavor, so we usually make it as a main dish, soup or even as a sauce.
Here we will make is as a sauce for pasta, but if you leave out the pasta it can work as a cream- its equally as tasty.
This dish can be vegan if you want to. It can also have any toping you want, we are just giving you a guide and a base.

1.Peel, take the seeds out and cut the butternut and vegetables of your choice, in this case we used carrots and cauliflower. Set everything aside, cover the butternut with water and boil it.
2. While this is cooking, caramelize the onions. Put some oil and saute the onions. Once they are transparent you can add a little bit of water to caramelize them but I like to add sugar to make it faster, sweeter and brown-er (its a little bit like cheating). I also think this adds a great flavor to the cream/sauce.
3. Once the pieces are soft (stab them with a fork to test) take them out and put them into the food processor or blender.
I like to save some of the water in case I want my sauce/cream a bit more watery
4. Add the spices. I like adding some cinnamon for an extra kick, but not too much because it can become spicy in a way we don’t like.
5. Add the caramelized onions and blend them/process them.
If you added sugar, try to keep them warm since they will harden when cold and this makes them stick to whatever surface you put them on.
6. This step is optional: add some cream cheese to make it creamier and softer.
If you want this to be a vegan dish or just a cream then you are done! serve it with some bread and veggies of you liking.
If you are making this into a pasta sauce then:
7. Make the pasta of you choice like you normally would. Once it is done, drain it and add the sauce. Mix it all together.
8. Here you can add some sauteed veggies, some bacon and cheese on top. It is up to you.
Remember that you can add some of the cooking water if you want your sauce to be more liquid or cream cheese to make it creamier.
