It doesn’t get any easier than this! If you want to impress someone or just have a nice and different meal here it is! This chicken pasta ensaladilla recipe is also great to take to work or school since you don’t have to heat it up and it takes very little time to make.
It requires few ingredients and chances are you already have most of them at home.
Whether you have a dorm kitchen or a big one, you will only need one pot and a chopping board.
It’s called ensaladilla because it is inspired on the Spanish food called “ensaladilla rusa”. It just has pasta instead of potatoes and we added chicken. Of course you can make it with potatoes instead of pasta, it will also turn out delicious.

Ingredients:
- Pasta. You can either use spaghetti, penne or fusilli
- 1 Chicken breast
- Mix of finely chopped vegetables of your choice: carrots, peas, zucchini, string beans, etc. *
- 3-4 spoons of mayo
- 2 tablespoons of garlic powder
- Salt-pepper to taste
* If you don’t have fresh ones, then use 1 cup of frozen vegetables
1. Cook the ingredients
Put the chicken breast in the pot and cover it with water. Once it boils, add the pasta and the vegetables so they all cook together and “absorb” the chicken flavor.
2. Strain
Once the pasta is al dente (ready to eat) strain the water.
3. Get the chicken ready
Shred the chicken and let the pasta cool down while you do this.
4. Mix
Put all the ingredients back in the pot and mix. Then add the mayo, garlic, salt and pepper.
Serve on a plate and put the onions on top!
